Chorizo and Roasted Cauliflower Hash

There’s a little Portugese butcher / rotisserie chicken type place down the street from me. As long as I’ve lived here I’ve avoided it because it’s always full of surly lookin old Portugese guys.

I finally nutted up and went in and discovered that they sell delicious delicious chorizo. I’ve starting to get bored of the scrambled eggs and ground beef slurry I’ve been calling breakfast for the past couple weeks, so I figured it was time to do something new.

Ingredients

  • half a head of cauliflower
  • 1 medium shallot, chopped
  • 2 tbsp chopped garlic
  • 1 chorizo sausage diced
  • 1/2 large red onion
  • 1/2 cup green onion diced
  • 3/4 cup black beans
  • 3 tbsp chili powder (I used real ancho chile powder)
  • salt
  • pepper

Instructions

  1. Turn on your broiler
  2. Chop the cauliflower into 1/2″ pieces and arrange in a baking / casserole dish
  3. spread garlic around evenly over the cauliflower
  4. add in the shallot
  5. drizzle liberally with vegetable oil and then sprinkle evenly with half the chili powder
  6. toss everything around, flatten out and coat with the rest of the chili powder
  7. throw in the broiler for 10 minutes
  8. in a large pan start cooking the chorizo on medium high, when it starts to get greasy add the black beans and continue cooking, stirring frequently
  9. When the cauliflower is done add it and the red onion to the mix and continue to cook for another 5 minutes, add the green onion and cook another 2 minutes
