vlcsnap-2013-02-08-15h51m56s31 So I had this left over chorizo and I had all this cheap chicken, my slow cooker was sitting on the table lookin all neglected and on top of all that I had this bottle of cajun seasoning I bought in New Orleans. What’s a boy to do? My friend Taylor had the answer: Jambalaya!

If you haven’t been to New Orleans and bought some cajun seasoning recently do the franks and ketchup thing in the ingredients list. Or better yet, go to New Orleans, Mardis Gras is next week!

  • 1 pound fully cooked andouille sausage or chorizo or any ol sausage for that matter
  • 1 pound skinless, boneless chicken breast halves cut into small chunks
  • 1 large onion, chopped
  • 1/2 cup chopped red bell pepper
  • 4 garlic cloves, minced
  • 2 tablespoons butter
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 6tbsp ketchup
  • 6 tbsp Franks red hot
  • 1/4 teaspoon cayenne pepper
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 1 bag of uncooked medium shrimp (if you wanna be lazy like I was, dump the shrimp in with everything else at the start. But if you want your shrimp to be juicy and plump, dont add them until 30 mins before serving)

Dump it all in your slow cooker and cook on high for 2-3 hours
